Too busy to eat healthy and paying for it?

Tired of paying ludicrous prices for food on the run? It’s easy to feel as if we have no choice, since you’d prefer to eat healthy but preparing healthy food takes all the time in the world. Therefore we justify to ourselves the cost of these ‘on the run’ meals or snacks, rather than getting up 20-30 minutes earlier (considering sleep is priceless!), or we just don’t have the time to fiddle around with numerous ingredients once we arrive home from work because our favourite show starts in less than an hour.

In reality, when taking into account pulling over to go to a café or even just taking a slight detour, along with lining up, ordering and even having to wait for food to be cooked, we may find, with just a little planning and the right recipes or ideas, we can achieve the same result or perhaps even have a little extra time to casually walk from the station rather than darting through crowds of people, or even spend a couple of extra precious minutes with our family and/or loved ones.

There are a plethora of ‘Quick and Easy’ recipes and ideas for healthy snacks and even complete meals on the internet. These are a few of my favourites:

 

Ham Cheese and Tomato Omelette Crumble

Ingredients:                                                                                           

2 eggs

1 small tomato

1 tbsp milk

1 tsp butter

1 tbsp parmesan, grated

1 tbsp chives or parsley, finely chopped

1 tbsp cheddar, grated

2 thin slices of ham

Method:                                                                                                

1.De-seed tomato and finely dice

2.Lightly beat the eggs with milk, salt and pepper. Pour in egg mixture,

cook over medium-high, ensuring the egg is being cooked evenly. When

the underside is golden take off heat. Scatter cheese, herbs and tomato, and

arrange ham on the top.

3.Cook for a further 30 seconds then slide onto plate, rub in butter,

remaining cheese, tomato and herbs and serve immediately

 

 

Fresh Fruit with Nut Crumble

Ingredients:

¾ cup toasted muesli

200g nuts&seeds with cranberries

2 tbsp honey

4 slices watermelon

1 cup each, raspberries, strawberries, blueberries and vanilla yoghurt

½ rockmelon, peeled, sliced

2 mangoes, oranges, kiwi fruit peeled and sliced

Method:

1.Preheat oven 180C. Line baking tray.

2.Place muesli, nuts&seeds and honey

in a bowl and toss to combine. Spread onto tray, cook 10 mins, cool.

3.Dollop yoghurt over fruit and then sprinkle nut crumble over the top

 

 

Green Bean Bake

Ingredients:                                                                                          

250g Sauteed Green Bean Mix

¼ cup Breadcrumbs

½ cup Tasty Cheese, grated

Method:                                                                                               

1.Preheat oven to 170C

2.Place the bean, tomato and breadcrumb mix in an oven dish,

sprinkle evenly with breadcrumbs and cheese.  Place in oven

for 10 minutes or until cheese is melted.

 

 

Asparagus Grissini Bundles

Ingredients:

18 Asparagus spears (ends trimmed)

Prosciutto

18 Grissini sticks

¼ cup Extra Virgin Olive Oil

Method:

1.Blanch asparagus in boiling water for 1-2 mins. Drain, rinse and dry

2.Cut prosciutto into thirds. Wrap around a spear and stick and serve with olive oil
