The Food Dude discovers Captain Baxter is proving irresistible by the sea, over the summer season!

Owners, Tom and Amara Doolan, and Matthew and Angela Dawson, proudly added to their iconic Sea Baths premises last October with the smart and elegant Captain Baxter, upstairs to their other two venues: the highly successful Republica Restaurant and Encore Functions Centre, and patronage has continued to be been enormous over the holiday season.

The vision they have for Captain Baxter is to create a nostalgic space which combines the characteristics of old St Kilda with the glamour and fashionable elegance of today. This has been achieved along with the simply breath taking 180 degree first floor views of St Kilda beach and seascape, making it a superb destination for relaxed, comfortable dining. One may visit for a single moment but end up staying all day! Hopping between the lavish cocktail bar, sophisticated lounge, outdoor terrace, or the remarkable dining room itself, sharing great food and drinks accompanied by those exquisite views.

Bar manager and mixologist, David Vaniersal welcomes you with tantalising cocktails and a friendly chat, and when you surrender to the enticing dining area, restaurant manager Paul Whitford and his engaging staff offer you a different perspective in dining service. It’s here where the highly capable head chef partnership of Danielle Rensonnet & Shaun Clancy combines to present you with an extraordinary dining experience!

They offer two menus that are changed monthly, reviewed weekly and are sometimes altered with new additions, always offering the patron an adventurous dining experience with each visit. If you are just dropping in for a snack and a cocktail, there’s a cute little high stool food bar area where these unique bar menu choices are served.

If you are there for the real deal, the average size dish is designed for sharing between two people. An eclectic menu: some with Asian influence, others Mediterranean. The Main Menu is presented with a choice of small plates such as: shaved cuttlefish, sobrasada, charred leeks & parsley, or roast quail, salted ricotta, grapes, candied walnuts, to mention a few! The larger plates this month have, as examples; gorgeous steamed snapper, smoked tomato & tamarind relish, cucumber relish or very tender lamb loin, crisp belly, garlic cream, slowly cooked tomato and dried olive – all extremely yummy!

The Captain Baxter kitchen is generating this remarkable selection of dishes under the stewardship of two of St Kilda’s most reputable chefs, both with a litany of experience throughout Europe and more particularly the Mediterranean, working on board magnate yachts and in stately home kitchens for the past three years. Their experience in the Greek islands manifests itself in this menu along with Thai and other Asian influences, gained prior to their illustrious careers in Melbourne, under the guidance of Damien Jones of Vin Cellars and Andrew McConnell, then of Circa the Prince.
