Signature Dish is a new section that explores the district’s best dishes. We aim to champion those culinary heavy hitters and uncover hidden gems by asking local restaurants to serve up their most popular dish.

This month – Earth,Wind & Flour (Elwood)

Ethnic diversity isn’t just valued in progressive societies, the pizza world operates on a similar system. Those restaurants offering exotic toppings qualify with First World credentials. Earth, Wind & Flour are major players, with a melting pot of cultural influences that includes Vietnamese, Mexican, French, Thai and Sri Lankan.

But what’s the ducks nuts – the go-to pizza for the paying faithful?

We asked owner Daz to cut away the chaff and nominate the most popular.

“The Muglai Lamb is mint yoghurt marinated lamb, baby spinach, cheese, chilli, spiced cauliflower and pumpkin and goats cheese. It nails all the right aspects of a great pizza for me – it’s crusty, spicy, light and deeply flavoursome all at the same time. A winter warmer for sure!”.

And it’s not as simple as just ladling left-over curry onto a pizza base. The recipe is a scientific balancing act to make these ingredients hold together without making a disastrous pizza mash.
