Phamish is fast becoming an ‘eating institution’ in St Kilda, like all the Saede family eating establishments in the past.

Michelle and Nicole Saede continue the tradition at Phamish.

The girls bring together a wealth of knowledge, an unparalleled level of service and electrifying personal energy. This magnificent location, overlooking Luna Park, Palais Theatre and the St Kilda Beach front and boardwalk, was on their radar for many years and finally they made Phamish a reality.

Michelle and Nicole have been “hands on” hospitality operators for many years, with restaurants running through their veins since they were children.

It’s their endeavour to elevate Phamish Food & Wine Bar, to par excellence, challenging all its competitors with its quality food and cordial and efficient service. Opening in an area with fierce competition, Phamish is certainly holding its own; catering not only for its fiercely loyal regular breakfast, lunch and dinner patrons, but also for the many tourists staying close by and the Palais Theatre preshow dinner and post-concert supper bookings. It’s not surprising to see crowds of up to 300 on a busy Saturday night, sometimes accommodating two sittings!

The Saede family have a rich history in the Melbourne cafe/restaurant industry and have contributed to the scene for many years. George Saede started off at Regos and Mondial in the city, then moved on to the famous Toorak Deli which established a food culture in itself, it set a Cafe culinary precedent in Melbourne in the 70’s and 80’s, and in 1990 George established the iconic Giorgios in the centre of Melbourne in the state of the art building, Malvern Square. He achieved phenomenal success even with the deep recession that took hold on the time.

Daughters Michelle and Nicole Saede commenced their hospitality careers here, in their family institution known as Giorgios. An enormous, 550 seated restaurant certainly became a great training ground in the food industry for the Saede girls, grooming them to continue the food culture tradition already entrenched in the Saede family, going back generations. Whilst Michelle also works full time with their father in the highly successful Saede Development, Nicole heads the operation at Phamish.

Phamish has completed its third year of successful operation and has established a formidable reputation in the St Kilda precinct, it is considered one of the prominent food establishments by the sea now.

The waiting and bar staff are young, dynamic and effervescent. The Kitchen is headed by Head Chef Themi Milikouros; growing up in a traditional Cypriot family, but being trained in French cuisine, brings a lot of energy and certainly passion to the kitchen of Phamish. He controls a young team, with sous Chef Yaniv Rosen, that certainly understands pressure when the Palais presents its big show nights, catering for generally 250 to 300 in about one and a half hours. The boys pride themselves on making most things in house, from relishes to gnocchi, and both have been part of Phamish since the doors opened.

Phamish offers an all day breakfast, lunch & dinner with a modern Australian menu incorporating a touch of Middle Eastern flavours.
