 who are contributing to our area’s emerging vibrant food culture!

 Chef Profile No. 4:  THEMI MILIKOUROS

 Phamish Food & Wine Bar, 30 Esplanade St Kilda

Themi, born in Australia descendant from Greek Cypriot parents who have Greek cooking in their blood, having operated a taverna in Cyprus, where Themi returned to and enjoyed an education in traditional Greek family cooking, for a number of years.

Back in Australia since he commenced cooking at the tender age of 15, before he was 20 he obtained his chef qualifications at Melbourne Tafe at an early age. His first job as a chef was in the famous Stavros Taverna in Albert Park and then gained extensive experience at Mediterranean cuisine eating establishments such as the Italian Panette Cafe in South Melbourne, for several years. He even tried his hand at serious French cooking at Aux Batti Foules, in Nicholson Street Fitzroy.

Themi, now brings all this experience of Greek Cypriot cooking, Italian and French cuisine to Phamish. It’s his kitchen and he established it four years ago since inception, under the stewardship of owners Nicole and Michelle Saade.

He has introduced his own special version of very special Middle Eastern cuisine, embracing all his culinary knowledge to produce the very healthy, fat free, and diverse menu at Phamish. For example he exclusively char grills, (no hot plate or oil), has developed a French cooking method that requires no fat, for example, the Middle Eastern Lamb Cigars with Parsley Thani, or  the delicious Za’atar Lamb cutlets on fried egg plant, are two such examples.

So from an extensive Tapas type menu, to wonderful grazing dishes to share to unique homemade pasta dishes such as Orecchiette Polpette- mouth-watering quality beef meatballs, baked in a sugo of red wine, tomato & basil finished with bocconcini.

Then there is his signature range of scrumptious wood-fired pizzas, with superb toppings as, chorizo & squid, haloumi, calabrese to home made Italian sausage – very yummy! He has an authentic Sicilian style pizza dough that is made with a special recipe with imported flour, honey and oregano.

Themi polices a well oiled and disciplined kitchen, and works hand in hand with his sous chef, Yaniv Rosen, along with only four other very efficient staff. They often cater for 200 to 300 patrons nightly due to the Palais pre-theatre bookings. He supervises the kitchen to produce both A ‘la carte and fixed menu and usually everybody is away by 8 pm for the theatre.

The Phamish good food reputation is in part due to the precision, fast service from the kitchen, all a testament to Themi’s inspiration, leadership and efficiency.
