Lime and Pistachio Cheesecake

Base Ingredients:

125 grams amaretto biscuits, finely crushed

125 grams marie biscuits, finely crushed

150 grams butter melted

½ teaspoon cinnamon

Lightly grease a 24cm spring form pan. After crushing biscuits add the butter and cinnamon, mix well. Press into the base and sides of the pan (about 5cm up the sides). Chill for half an hour to 1 hour.

 

Filling Ingredients:

500 grams cream cheese, softened

300ml thickened cream

¼ cup lime juice

1 tin condensed milk

½ cup crushed pistachio nuts

3tbs gelatine

Place cream cheese, cream and condensed milk into a bowl, along with gelatine that has been added with lime juice. Place into microwave for 40secs. Take out and mix until gelatine has dissolved. Wait until it’s cooled then add pistachios to the filling and fold through. Pour this mixture over the biscuit base, then decorate with whipped cream and crushed pistachio nuts.
