Featured Dish: Hotate Yaki

Seldom are we rendered speechless by a dish. But Fuji Tei’s Hotate Yaki (Japanese scallop) created an entire 5 minutes of silence. Not the awkward silence of a stuttering Tinder date, more an awestruck and deep contentedness, where words were not sufficient to transmit the deliciousness. 

The scallops are pan-seared in Japanese sake dressed and flame torched Mentai (Spicy cod roe) mayonnaise. It’s a multi-layered miniature cauldron of taste, with varied textures from the tiny cod roe mouth explosions to the creamed mushrooms. The flavours have all the congruent complexity of great Japanese – notes of smokiness, the buttery sauce, plus the sake’s sweet and sourness.   

Naturally, the presentation is second-to-none, all combined ornately in a shell.
