Signature Dish is a new section that explores the district’s best dishes. We aim to champion those culinary heavy hitters and uncover hidden gems by asking local restaurants to serve up their most popular dish.

chuloThis month – Chulo Bar de Tapas (Acland St)

St Kilda’s latest tapas vendor is all about authenticity. From the Flamenco skirt mural, the distinctly Spanish ceramic tiles and latino staff, the place could be lifted directly from the centre of Barcelona.

Chulo blends its Mediterranean personality and cooking style of chef Pablo Diaz. Chulo encapsulates the joys of communal eating; shared plates, good conversation, hands reaching for bread and wine. It’s a place where flavours bring people closer together.

So what’s their Signature Dish?

Paella de pescado - Traditional seafood paella of calamari, prawns, mussels & saffron rice

Head chef Pablo: “Paella is a dish that you cannot rush. It takes about 30 minutes to cook, and the rice must not be stirred so that it can develop the ‘socarrat’ – this is the toasted crust of rice at the base of the pan and is an essential part of a good paella”

The dish has all the hallmarks of a great paella, without the need to pimp it up with overt window dressing. The prawns were especially succulent and the rice layered with geological precision.
