Claire Levett of Hub Café is our St Kilda Bites choice this edition

Having moved from Perth over three years ago for a lifestyle change in the ‘big smoke’, Claire Levett, landing a job at the Hotel Urban St Kilda cafe, thencalled ‘Sugar’ (now newly renovated, bigger and better and re-named ‘The Hub’), has never looked back.

With a love of coffee (especially a good soy latte) and a passion for the hospitality industry (not to mention her down-to-earth charm and continual desire to learn); it was these attributes that secured Claire her barista position. Eager to learn, Claire started out by being taken under the wing of one of the business’s well accomplished barista’s (holding over ten years of experience and knowledge under his belt). Soaking up all the tricks of the trade; knowledge, hands-on know-how and coffee making techniques, Claire soon found her own hand at making the perfect cup of the fine brew, a cup that she could be proud to call her own.

Now an established ‘Head Barista’ of the Hub Café, Claire likes to concentrate her coffee making efforts on two main things: getting the temperature of the coffee she makes just right and extracting the full taste profile of the beans she uses (Claire works with the Genovese Super Brazil blend), to ensure her customers a flavoursome and consistent cup every time!
